ABOUT THIS BOTTLING

Our fourth batch from this unnamed Tennessee distillery is a 4 Year Old Straight Rye Whisky, a release of just 300 bottles at 45% abv.

Sadly we’re not able to name this distillery, but you’ll notice it’s definitely labelled as a Tennessee whisky (without an ‘e’) which narrows it down an awful lot!

Whiskey production has a rich history in Tennessee that only just survived both national prohibition, and a longer statewide prohibition. As immigrants moved to the frontier in the late 18th century, they brought their distilling practices with them, though they primarily used rye rather than corn. Rye didn’t grow too well in Tennessee conditions so maize became the key crop of the state.

In 1908 Tennessee had hundreds of registered distilleries across the state. The temperance and prohibition movements of the mid-19th and early-20th centuries nearly destroyed the whiskey industry in Tennessee completely. Tennessee led the way in prohibition in 1910, banning the production of whiskey ten years ahead of the Federal ban in 1920. Tennessee also remained dry until 1939, six years after the Federal ban was lifted.

The Jack Daniels Distillery reopened soon after the law allowed, in 1940, and George Dickel returned in the 1950’s, and both began rebuilding Tennessee's spirits industry.

Rye whiskey rules in the US follow Bourbon rules; 51% of the mashbill must be rye. Tennessee whiskey producers are required by law to use a filtering step known as the Lincoln County Process prior to aging the whiskey


NOSE

Ripe Papaya with a splash of lime, and blackboard chalk dust/rubber. Creamy vanilla notes follow with hints of clove and anise.

TASTE

Sweet and oily initially. A short spicey build up follows while delicate fruit flavours; papaya and apricot interplay with wood spices.

Finishing peppery, sweet, and the apricot lingers.


 

ABOUT THE LABEL

Tennessee whiskey must be filtered through charcoal (this filtering step is known as the Lincoln County Process) prior to aging the whiskey.

Our label features a whole load of sugar maple on fire, making charcoal, in some sort of hollow - another clue?
