ABOUT THIS BOTTLING
Our first batch from Denmark’s Stauning distillery is a 3 Year Old Rye Whisky matured in a cask which previously held rum from Belize. It’s release of just 249 bottles at 48.5% abv.
Stauning is the first whisky distillery in the Kingdom of Denmark, founded and run by nine whisky enthusiasts in 2005. None of them had any experience in whisky production, their backgrounds were: 4 engineers, a teacher, a chef, a butcher, a radio show presenter and a doctor.
They originally set out to make a peated whisky, using Danish peat. The first distillery site was an old abattoir, adapted by them for whisky production:
The floor of the old cold store was used to malt barley.
An old mincer was used as a grain mill.
A pickling vat was used for fermentation.
A smoke oven (which still smelled of bacon) was used to smoke grain.
They soon outgrew the abattoir and moved to larger premises at a local farm a few clicks from Stauning. Much of the machinery they use today was designed and built in house, the grain turning machine, the mash tun, the labelling machine.. Right from the start they’ve always used small, Spanish made, copper pot stills. They have 24 of them now! It’s become a feature in their logo too.
NOSE
Quite delicate and estery. Hints of cedar wood, rye toast and a runny honey sweetness, with just a hint of lemon water.
TASTE
Light, the rum influence is noticeable. There’s a sweet tea note to this, alongside a fennel seed, caraway spiciness.
The finish is short with sweet nutty praline, and milk chocolate.

Our label simply depicts the checklist that we envisaged Martin started writing to ensure the Stauning distillers are on track to create a whisky distillery!
Right at the top there’s the list of the other professions of the fellow founders and whisky enthusiasts.
All of the other items on the list play a part in the beginnings of the Stauning Whisky Distillery. Kinda glad they remembered the stills.
