ABOUT THIS BOTTLING

The Limeburners Distillery is in the south-western corner of Western Australia, in the Margaret River region. The area is famous for wine production, and also hosts an annual event of the World Surf League. The site was chosen for its cool climate and access to high quality water.

Founded by lawyer Cameron Syme, the parent company Great Southern Distilling operate three distilleries in the region making gin, malt, grain and rye whisky, with Limeburners being the brand for the single malt whisky.

It’s another small distillery, with an annual capacity of just 120,000 litres of pure alcohol a year. All of the grain they use comes form Western Australia,, and generally their spirit is matured in second fill American oak bourbon barrels, with some expressions finished in Australian fortified wine barrels. Interestingly they have a peated whisky that is made using locally sourced peat from the Valley of the Giants in nearby Walpole.

Our Limeburners is a 5 year old single malt, that’s been matured in an ex-Pedro Ximenez Apera cask


NOSE

Rich and Oily. With raisin, dark molasses, maraschino cherry syrup. Some savory notes too; ancho pepper and bitter dark chocolate, with just a hint of lavender.

TASTE

Rich and weighty, but beautifully balanced. Velvety dark chocolate, mole sauce, black cherry and tobacco notes

Those chocolate notes linger long into the lengthy finish.


 

ABOUT THE LABEL

In the glorious Aussie ‘gold and green’ our label plays on a hilarious story we were told, where distillery founder, Cameron Syme told Tony Abbott, the Australian Prime Minister, that he couldn't have another bottle of the whisky that the distillery makes and donates to the Australian SAS. We’ve also got some shockingly bad lime puns of course.

Our deadly animal is the Box Jellyfish so named for its shape - is considered to be the most venomous marine animal. It has long barbed tentacles which are covered in pockets of venom. When injected into people or animals, it can lead to paralysis, cardiac arrest and death.
